The project included 10,000 rural farmers hailing from Madhya Pradesh. With COVID-19 attaining its peak, there is a high demand for hygiene and food safety by the consumers that have drastically upsurged the demand for frozen fruits and vegetables. 
 
The nutritional value of frozen vegetables is believed to be comparatively less than fresh vegetables. But at the same time, many nutritionists and dieticians do not agree on this viewpoint. According to them, the nutritional value of frozen vegetables and fruits is on par with fresh vegetables or even higher. Moreover, frozen vegetables are found to be extremely economical.
 
Several reasons contribute to the escalating demand for frozen fruits and vegetables including changing food habits, lifestyle, urbanization growth, and dependency of people on convenient and readymade food. Moreover, the evolution in freezing technologies has augmented its demand even more.
